Prepare the Chicken
Pound the chicken breasts to an even thickness. Season with salt and pepper.

Breading Process
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in egg, and coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On each piece of focaccia, place a fried chicken breast, top with sliced tomatoes, and a generous handful of lemon-dressed arugula. Close the sandwich with the other piece of focaccia.

Cut the sandwich in half and serve immediately with your choice of side.
