1. Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to form fries.

2. Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

In a large bowl, toss the dried fries with olive oil, za’atar spice blend, and salt until evenly coated.

4. Bake the Fries

Preheat your oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.
