Make the Dough
In a large bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Add the egg and mix until the dough comes together. Wrap in plastic wrap and chill for at least 30 minutes.

Prepare the Filling
In a separate bowl, mix the ricotta cheese, lemon zest, lemon juice, and vanilla extract until smooth. Set aside.

Roll Out the Dough
Preheat the oven to 400°F (200°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into rectangles (about 3x4 inches).

Assemble the Pop Tarts
Place half of the dough rectangles on a baking sheet lined with parchment paper. Spoon a tablespoon of the ricotta filling onto the center of each rectangle. Top with the remaining rectangles and press the edges to seal.

Bake in the preheated oven for 15-20 minutes or until golden brown. Let cool on a wire rack.

In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled pop tarts before serving.
