Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Prepare the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center, and add the yeast mixture and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Rolls
Punch down the dough and divide it into 8 equal pieces. Shape each piece into a round roll and place them on a baking sheet lined with parchment paper.

Second Rise
Cover the rolls with a cloth and let them rise for another 30-45 minutes until puffy.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare for Baking
Mix the egg yolk with a tablespoon of water and brush the mixture over the rolls. Sprinkle poppy seeds on top.

Bake in the preheated oven for 15-20 minutes or until golden brown.

Remove from the oven and let cool on a wire rack before serving.
