    Wash and peel the Russet potatoes. Cut them into even sticks, approximately 1/4 inch thick.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain the water and pat the potatoes dry with a clean kitchen towel to remove any moisture.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
