1. Prepare the Steak
Season the steak with salt and black pepper. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from the pan and let it rest.
2. Cook the Rice
In a pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and water is absorbed.
3. Sauté the Vegetables
In the same pan used for the steak, add 1 tablespoon of olive oil. Add minced garlic and sauté for 30 seconds. Then add bell pepper, zucchini, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
4. Combine and Serve
Slice the rested steak and serve it over a bed of brown rice, topped with the sautéed vegetables. Drizzle with soy sauce to taste.
