Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Prepare Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture. Mix until a dough forms.

Knead Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Mandazi
Once risen, punch down the dough and roll it out to about 1/2 inch thickness. Cut into triangles or circles.

Fry Mandazi
Heat vegetable oil in a deep frying pan over medium heat. Fry the mandazi in batches until golden brown on both sides, about 3-4 minutes. Drain on paper towels.
