    Soak the Beans

    Rinse the dried black beans under cold water. Place them in a large bowl, cover with water, and soak overnight or for at least 6 hours.

    Cook the Beans

    After soaking, drain and rinse the beans. In a large pot, combine the beans and 4 cups of fresh water. Bring to a boil, then reduce to a simmer and cook for 1 to 1.5 hours, or until the beans are tender.

    Sauté Aromatics

    In a separate pan, heat the olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.

    Combine and Season

    Once the beans are cooked, add the sautéed onion and garlic to the pot with the beans. Stir in cumin, salt, and pepper to taste. Let it simmer for an additional 10 minutes.

    Finish the Dish

    Stir in lime juice and fresh cilantro just before serving.
