Tempura Fried Salt Cod Croquettes

Preparation and Cooking

Prepare the Salt Cod
Soak the salt cod in cold water for 24 hours, changing the water several times. Drain and flake the cod into small pieces.

Make the Potato Mixture
Boil the potatoes until tender, then mash them in a large bowl. Add the flaked salt cod, chopped green onions, and egg. Mix well and season with salt and pepper.

Form the Croquettes
Shape the mixture into small balls or patties and refrigerate for at least 30 minutes to firm up.

Prepare the Tempura Batter
In a bowl, combine the tempura batter mix with cold water and whisk until smooth.

Fry the Croquettes
Heat vegetable oil in a deep skillet. Dip each croquette in the tempura batter and carefully place in the hot oil. Fry until golden brown on all sides, about 3-4 minutes. Drain on paper towels.

Make the Pickled Celery
In a small bowl, combine chopped celery, white vinegar, and salt. Let it sit for at least 30 minutes.

Prepare the Spicy Parsley Mayo
In a bowl, mix mayonnaise, chopped parsley, cayenne pepper, and lemon juice. Season with salt and pepper to taste.

Serve the croquettes hot with pickled celery and spicy parsley mayo on the side.
