    Prepare the Ingredients

    Preheat your oven to 375°F (190°C). In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until caramelized, about 10-15 minutes.

    Cook the Potatoes and Squash

    In the same skillet, add the diced potatoes and honey nut squash. Cook until they are tender, about 10-12 minutes. Stir occasionally and add a little water if necessary to prevent sticking.

    Beat the Eggs

    In a bowl, whisk the eggs, salt, black pepper, and fresh thyme (if using).

    Combine and Cook

    Once the vegetables are cooked, reduce the heat to low. Pour the egg mixture over the vegetables, gently stirring to distribute evenly. Sprinkle the crumbled goat cheese on top.

    Bake the Frittata

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden brown on top.

    Allow the frittata to cool slightly before slicing. Serve warm, with roasted garlic aioli on the side.
