    Prepare the Duck Confit

    Preheat the oven to 300°F (150°C). Place the duck legs in a baking dish and cover them with duck fat. Bake for 2-3 hours until tender. Remove from the oven, cool, and shred the meat from the bones.

    Cook the Hash

    In a large skillet, heat a couple of tablespoons of duck fat over medium heat. Add the diced potatoes and cook until they are golden and crispy, about 10-15 minutes.

    Add Vegetables

    Add diced onion, minced garlic, jalapeño, and chopped broccoli rabe to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.

    Combine Duck

    Stir in the shredded duck meat, salt, and black pepper. Cook for another 5 minutes until everything is heated through and well combined.

    Fry the Eggs

    In a separate skillet, fry the eggs to your preference (sunny-side up or over-easy).

    Serve the duck confit hash on plates, topped with a fried egg.
