Prepare the Marinade
In a medium bowl, whisk together the coconut milk, soy sauce, brown sugar, ground coriander, ground cumin, minced garlic, grated ginger, salt, and black pepper.

Marinate the Chicken
Cut the chicken thighs into strips and place them in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they can be used directly.

Skewer the Chicken
Thread the marinated chicken strips onto the skewers, leaving a little space between each piece.

Make the Peanut Sauce
In a small saucepan over low heat, combine the creamy peanut butter, coconut milk, soy sauce, brown sugar, lime juice, sriracha sauce, and water. Stir until smooth and heated through, about 3-5 minutes.

Serve
Remove the peanut sauce from heat and let it cool slightly. Serve the grilled chicken satay skewers with the warm peanut sauce for dipping.
