Preparation of Chicken Skewers

    Marinate the Chicken

    In a large bowl, combine soy sauce, lime juice, minced garlic, minced ginger, brown sugar, and salt. Add the boneless chicken thighs and ensure they are well coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes.

    Skewering

    After marinating, take the chicken out of the refrigerator. Thread the chicken thighs onto the skewers, making sure to leave some space between each piece for even cooking.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to ash over until they are covered with white ash.

    Grill the Skewers

    Place the chicken skewers on the grill. Cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

Making the Peanut Sauce

    Combine Ingredients

    In a medium saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red chili flakes. Stir until smooth.

    Adjust Consistency

    If the sauce is too thick, add water one tablespoon at a time until the desired consistency is reached. Heat for an additional 2-3 minutes, stirring continuously.
