Method
Prepare the Sticky Rice
- 1
Soak the Rice
Rinse 1 cup of glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- 2
Steam the Rice
After soaking, drain the rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for about 25-30 minutes, or until tender and sticky.
Make the Coconut Sauce
- 3
Combine Ingredients
In a saucepan over medium heat, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt. Stir until the sugar dissolves.
- 4
Heat the Sauce
Bring the mixture to a gentle simmer and cook for about 5 minutes. Remove from heat and set aside.
Prepare the Topping
- 5
Slice the Mango
Peel and slice the two mangos into thin strips or wedges.
- 6
Prepare Sesame Seeds
If using sesame seeds, toast them in a dry pan over medium heat for a few minutes until golden. If using mung beans, boil them until tender and drain.
Assemble the Dish
- 7
Combine Rice and Sauce
Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Mix well to incorporate the sauce into the rice.
- 8
Serve
Serve the sticky rice on a plate, topped with the sliced mango, the remaining coconut sauce drizzled over the top, and sprinkle toasted sesame seeds or mung beans for garnish.
