    Prepare the Tofu

    Drain the firm tofu and press it gently to remove excess moisture. Cut it into bite-sized cubes.

    Chop the Vegetables

    Dice the green bell pepper, slice the zucchini, and chop the broccoli into small florets. Rinse the spinach and set aside.

Cooking

    Sauté the Tofu

    In a large pan over medium heat, add a splash of oil and sauté the cubed tofu until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.

    Cook the Vegetables

    In the same pan, add the green bell pepper, zucchini, and broccoli. Stir-fry for about 4-5 minutes until they begin to soften.

    Add the Green Curry Base

    Stir in the green curry paste and cook for 1-2 minutes until fragrant. Then, add the coconut milk, vegetable broth, soy sauce, and brown sugar. Mix well.

    Combine Tofu and Spinach

    Return the sautéed tofu to the pan along with the spinach. Cook for an additional 3-4 minutes until the spinach wilts and the mixture is heated through.

    Serve the green curry hot, garnished with fresh basil leaves and lime wedges on the side for squeezing over the top.
