Cook the Rice
In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Mix the Sauce
In a small bowl, combine 4 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 teaspoons of minced garlic, 1 teaspoon of grated ginger, 1 teaspoon of cornstarch, and 2 tablespoons of water. Whisk until smooth and set aside.

Stir-Fry the Vegetables
In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the sliced bell peppers, broccoli florets, sliced carrots, snap peas, and sliced mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

Add Sauce
Pour the prepared sauce over the stir-fried vegetables. Stir well to coat the vegetables evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Finish and Serve
Remove the stir-fry from heat and stir in the sliced green onions. Serve the vegetable stir-fry over a bed of the cooked rice.
