Preparation

  1. 1

    Prepare the Ingredients

Chop the onion, bell pepper, and mushrooms. Mince the garlic. Set aside.

  2. 2

    Cook the Wild Rice

In a medium saucepan, bring 2 cups of chicken broth to a boil. Add 1 cup of wild rice, reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the broth is absorbed. Fluff with a fork and set aside.

Cooking

  1. 3

    Cook the Taky

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes or until the vegetables are softened.

  2. 4

    Add the Mushrooms

Add the sliced mushrooms to the skillet. Stir and cook for another 5-7 minutes until the mushrooms are tender.

  3. 5

    Season the Mixture

Add the Taky (turkey) to the skillet, season with salt, black pepper, paprika, and thyme. Cook for about 10-12 minutes, stirring occasionally, until the turkey is cooked through and no longer pink.

  4. 6

    Combine with Wild Rice

Once the turkey is cooked, add the cooked wild rice to the skillet. Stir well to combine all the ingredients. Cook for an additional 5 minutes to heat through.

  5. 7

    Garnish and Serve

Remove from heat, sprinkle with chopped parsley, and serve hot.
