Sandwich Preparation

    Cook the Protein

    In a skillet over medium heat, cook the sausage or bacon until crispy and fully cooked, about 4-5 minutes. Remove from the skillet and set aside.

    Prepare the Eggs

    In the same skillet, crack the eggs and cook them to your desired doneness (sunny-side up, over easy, etc.), about 3-4 minutes. During the last minute of cooking, place a slice of sharp white cheddar on top of each egg to melt.

    Toast the Brioche Buns

    While the eggs are cooking, slice the brioche buns in half and toast them in the skillet until golden brown, about 1-2 minutes.

    Assemble the Sandwich

    Spread 1 tablespoon of spicy mayo on the bottom half of each toasted brioche bun. Place the cooked sausage or bacon on top, followed by the egg with melted cheddar. Top with the other half of the bun.

    Prepare the Roasted Potatoes

    Preheat the oven to 400°F (200°C). Cut the potatoes into small cubes and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, tossing halfway through, until golden and crispy.

    Prepare the Salad

    In a bowl, combine the mixed greens with your choice of dressing (optional). Serve alongside the sandwich.
