Method

Preparing the Soup Base

  1. 1

    Sautéing the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 2

    Adding Aromatics

Add the minced garlic, dried thyme, and bay leaf to the pot. Stir well and cook for an additional 1-2 minutes until fragrant.

  3. 3

    Adding Broth

Pour in the chicken or turkey broth and bring the mixture to a boil.

Cooking the Wild Rice

  1. 4

    Incorporating Wild Rice

Once the broth is boiling, add the uncooked wild rice. Reduce the heat to low, cover, and simmer for 45-50 minutes until the rice is tender.

Adding Turkey and Cream

  1. 5

    Stirring in Turkey

After the wild rice is cooked, stir in the shredded cooked turkey. Allow it to heat through for about 5 minutes.

  2. 6

    Finishing with Cream

Pour in the heavy cream and stir well. Season the soup with salt and black pepper to taste.

  3. 7

    Garnishing

Remove the bay leaf and serve the soup hot, garnished with freshly chopped parsley.
