Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and beat until well combined.

    Add remaining ingredients

    Add the sour cream and vanilla extract to the cream cheese mixture and blend until smooth. Add the eggs one at a time, mixing on low speed until just incorporated. Be careful not to overmix.

    Pour into crust

    Pour the cream cheese filling into the cooled graham cracker crust, spreading it evenly with a spatula.

Baking

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door cracked open for about 1 hour.

    Chill the cheesecake

    Remove the cheesecake from the oven and allow it to cool to room temperature. Then, refrigerate for at least 4 hours, or overnight, before serving.
