    Roast the Potatoes

    Preheat your oven to 400°F (200°C). Wash and dice the baby potatoes into small cubes. Toss them with olive oil, salt, and black pepper. Spread them evenly on a baking sheet and roast for about 20-25 minutes or until golden and crispy, flipping halfway through.

    Cook the Bacon

    While the potatoes are roasting, cook the bacon in a skillet over medium heat until crispy. Once cooked, remove from skillet and place on paper towels to drain excess fat. Crumble the bacon into small pieces.

Cooking the Eggs

    Fry the Eggs

    In the same skillet used for bacon, crack the eggs and cook them sunny-side up or to your desired doneness. Season with salt and pepper.

Assembling the Flatbread

    Build the Flatbread

    On each piece of flatbread, spread a generous amount of crème fraîche. Evenly distribute the roasted potatoes, crumbled bacon, and fried eggs. Top with shredded fontina cheese and sliced green onions.

    Place assembled flatbreads on a baking sheet and bake in the oven at 400°F (200°C) for about 5-7 minutes, or until the cheese is melted and bubbly.

    Remove the flatbreads from the oven and let them cool for a minute. Cut into slices and serve immediately, garnished with additional green onions if desired.
