    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

    Cut in Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix it until the mixture resembles coarse crumbs.

    Add Buttermilk

    Pour in the buttermilk and gently mix until just combined. Do not overmix.

    Shape Biscuits

    Turn the dough onto a floured surface and gently knead it a few times. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or a glass.

    Bake the Biscuits

    Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes until golden brown.

    In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon until browned and fully cooked.

    Sprinkle the flour over the cooked sausage and stir to combine, cooking for about 1-2 minutes to eliminate the raw flour taste.

    Gradually pour in the milk while stirring constantly to prevent lumps. Cook until the mixture thickens, about 5-7 minutes.

    Stir in thyme, salt, and black pepper to taste. Adjust seasoning as needed.
