Cider Brewing Process

    Prepare the Apples

    Wash the apples thoroughly and chop them into quarters. Remove any stems and seeds.

    Extract the Juice

    Using a juicer or a cider press, extract the juice from the apple quarters. Collect the juice in a sanitized fermentation vessel.

    Add Water and Sugar

    Pour 1 cup of water into the juice and add 1 cup of sugar. Stir well until the sugar is fully dissolved.

    Add Yeast and Additives

    Sprinkle the cider yeast over the juice mixture. If using, crush and add the Campden tablets to sterilize the mixture. Add acid blend and pectic enzyme, stirring gently to combine.

    Fermentation

    Cover the fermentation vessel with an airlock and let it sit in a cool, dark place for about 1-2 weeks, or until fermentation is complete (bubbling stops).

    Racking

    Once fermentation is complete, siphon the cider off the sediment into a clean vessel, leaving the sediment behind.

    Add Finings (optional)

    If desired, add finings to help clarify the cider, and let it sit for an additional week.

    Bottling

    Bottle the cider in sanitized bottles, leaving some space at the top. Seal with caps or corks.

    Aging

    Let the cider age for at least 1 month before consuming for the best flavor.
