Marinate the Chicken
In a bowl, mix buttermilk and hot sauce. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a separate bowl, combine flour, cayenne pepper, paprika, garlic powder, salt, and black pepper. Mix well.

Dredge the Chicken
Remove chicken from the marinade and allow excess to drip off. Dredge each piece in the flour mixture, pressing firmly to coat.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the chicken pieces. Fry for about 5-7 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C).

Prepare the Sauce
In a small bowl, mix some of the leftover frying oil with additional cayenne pepper to taste, creating a spicy oil. Brush this mixture over the fried chicken.

Assemble the Sandwich
Toast the brioche buns if desired. Place a piece of spicy chicken on the bottom half of each bun, top with pickles, and drizzle with ranch dressing. Add the top half of the bun.
