    Prepare the Breakfast Potatoes

    Dice the breakfast potatoes and boil them in salted water until tender, about 10 minutes. Drain and set aside.

    Cook the Turkey Sausage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the turkey sausage and cook until browned and fully cooked, about 6-8 minutes. Remove from skillet and set aside.

    Scramble the Eggs

    In a bowl, whisk together the eggs with salt and pepper. In the same skillet, add another tablespoon of olive oil if needed. Pour in the eggs and scramble until cooked through, about 3-4 minutes.

    Prepare the Cheese Sauce

    In a small saucepan, combine smoked gouda and pepper jack cheese with 1/4 cup of milk over low heat. Stir until melted and smooth. If too thick, add more milk to reach desired consistency.

    Prepare the Avocado Salsa Verde

    Mash the avocado in a bowl and mix with salsa verde. Set aside.

    Assemble the Burritos

    Lay a flour tortilla flat and layer with scrambled eggs, turkey sausage, breakfast potatoes, and cheddar jack cheese. Top with avocado salsa verde and drizzle with cheese sauce. Roll the tortilla tightly to form a burrito.

    Cut the burrito in half and serve immediately with extra salsa verde on the side, if desired.
