    Prepare the Steak

    Cut the sirloin steak into 1-inch cubes. In a bowl, combine the olive oil, herbs de Provence, salt, and black pepper. Add the steak cubes and marinate for at least 30 minutes.

    Prepare the Brussels Sprouts Slaw

    Finely shred the Brussels sprouts and toss them with lemon juice and a pinch of salt. Set aside to let the flavors meld.

    Prepare the Potatoes

    If using raw fingerling potatoes, boil them until tender. If they are already fermented, just slice them. Drizzle with olive oil and season with salt and pepper.

    Assemble the Brochettes

    Thread the marinated steak cubes onto skewers, alternating with pieces of fingerling potatoes if desired.

    Broil the Brochettes

    Preheat the broiler. Place the skewers on a broiler pan and broil for about 6-8 minutes, turning halfway through, until the steak is cooked to medium doneness.

    Serve

    Remove the brochettes from the oven and let them rest for a few minutes. Serve with Brussels sprout slaw and fermented potatoes on the side.
