Frites Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with a clean kitchen towel.

    Heat the Oil

    In a large pot or deep fryer, heat the olive oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch.

    Drain and Season

    Remove the frites from the oil and drain on paper towels. While still hot, toss the frites with sea salt, black pepper, parsley, and thyme.

    Serve

    Serve the frites hot with bearnaise sauce on the side.
