    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Vegetables

    Wash and slice the zucchini, yellow squash, tomatoes, and onion into thin rounds.

    Arrange in Baking Dish

    In a greased baking dish, arrange the sliced vegetables in an overlapping pattern, alternating between zucchini, yellow squash, tomatoes, and onion.

    Season the Vegetables

    Drizzle olive oil over the arranged vegetables. Sprinkle with Herbs de Provence, salt, and black pepper.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and slightly caramelized.
