    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized (about 20-25 minutes).

    Season the sirloin steak with salt and pepper. In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest before slicing.

    In a small bowl, combine mayonnaise, Dijon mustard, and a pinch of salt. Mix well until smooth.

    Slice the French rolls in half and spread the Dijon aioli on both sides. Layer with arugula, sliced steak, caramelized onions, and top with gruyere cheese.
