    Prepare the Filling

    In a skillet, sauté the mixed vegetables in a bit of oil until tender. Add the curry powder, salt, and black pepper. Stir in the cashews and raisins. Cook for another 2-3 minutes. Remove from heat and let cool slightly. Mix in yogurt and chopped mint.

    Make the Dumplings

    Using store-bought dumpling wrappers, place a spoonful of the filling in the center of each wrapper. Fold and seal the edges by pinching them together. Repeat until all filling is used.

    Cook the Dumplings

    Steam the dumplings in a steamer basket over boiling water for about 10-12 minutes until cooked through. Alternatively, you can pan-fry them in a bit of oil until golden and crisp on both sides.

    Serve

    Serve the dumplings warm with pita bread and additional yogurt on the side for dipping.
