    Make the Bechamel Sauce

    In a saucepan over medium heat, melt the butter. Add the flour and whisk for about 1-2 minutes until golden. Gradually whisk in the milk, continuing to whisk until the sauce thickens. Stir in nutmeg, salt, and pepper. Remove from heat.

    Assemble the Sandwich

    Preheat a skillet over medium heat. Spread some of the bechamel sauce on one side of each slice of brioche. Layer ham and gruyere cheese on two slices, then top with the other two slices, bechamel side down.

    Grill the Sandwich

    Melt a tablespoon of butter in the skillet. Place the sandwiches in the skillet and grill until golden brown on one side. Flip, add the remaining butter, and grill the other side until the cheese is melted and the bread is golden.

    Fried Egg (for Madame option)

    If making a Madame, fry an egg in the same skillet until the white is set and the yolk is still runny. Place the fried egg on top of the grilled sandwich.

    Serve

    Serve the Croque Monsieur with mixed greens on the side and drizzle remaining bechamel sauce over the sandwich if desired.
