Burger Preparation

    Caramelize the Onions

    Slice the onion and mince the garlic. In a skillet over medium heat, add a tablespoon of oil and sauté the onion until soft and golden brown, about 15-20 minutes. Add minced garlic in the last 5 minutes. Season with salt and pepper, then remove from heat.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove and drain on paper towels.

    Prepare the Patties

    Divide the ground beef into two equal portions and gently form into balls. Season with salt and pepper.

    Smash and Cook the Patties

    Heat the skillet over high heat. Place the meat balls in the skillet, and using a spatula, smash them down to form thin patties. Cook for about 2-3 minutes per side until a crust forms. Add a slice of gorgonzola dolce on each patty during the last minute to melt.

    Prepare the Aioli

    In a small bowl, mix together the mayonnaise and cherry jam until well combined.

    Assemble the Burger

    Toast the brioche buns lightly. On the bottom bun, layer the smashed beef patty with melted cheese, topped with caramelized onions and crispy bacon. Spread the cherry aioli on the top bun and place it on top. Serve immediately.
