Prepare the Pork
Cut the pork tenderloin into bite-sized cubes and season with salt and pepper. Coat the pork pieces with cornstarch.

Cook the Pork
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork cubes and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

Sauté Vegetables
In the same skillet, add the remaining tablespoon of oil. Add minced garlic, chopped onion, and bell peppers. Sauté until the vegetables are tender, about 3-4 minutes.

Add Pineapple and Sauce
Stir in the pineapple chunks. In a separate bowl, mix together your sweet and sour sauce (store-bought or homemade) and pour it over the vegetables. Bring to a simmer.

Combine and Serve
Return the cooked pork to the skillet, stir to combine and heat through for another 2-3 minutes. Serve hot over rice or noodles.
