Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot and cook according to the rice cooker's instructions or bring to a boil in a pot, then reduce heat to low, cover, and simmer for about 20 minutes. Once cooked, let it rest for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula. Allow the seasoned rice to cool to room temperature.

Assemble Sushi Rolls
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Lay cucumber, avocado, and crab meat in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water. Repeat with the remaining nori sheets and fillings.

Using a sharp knife, slice each roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
