Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Fold this mixture into the cooked rice once it has cooled to room temperature.

Assemble the Sushi Rolls
Lay a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about an inch at the top edge. Place cucumber, avocado, and crab meat in a line along the bottom edge. Carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
