Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Cook the Shrimp
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove from the skillet and set aside.

Scramble the Eggs
In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until fully cooked. Remove and set aside.

Stir-Fry the Vegetables
Add the minced garlic to the skillet and sauté for about 30 seconds. Then add the soaked noodles, bean sprouts, and green onions. Stir-fry for about 2-3 minutes.

Add the Sauce
In a small bowl, mix the peanut butter, soy sauce, fish sauce, and lime juice. Pour this sauce over the noodle mixture and stir to combine.

Remove from heat and serve hot, garnished with crushed peanuts and cilantro.
