Soak the rice noodles in warm water for about 20-30 minutes until they are soft. Drain and set aside.

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add sliced chicken and cook until no longer pink, about 5-7 minutes. Remove from pan and set aside.

In a small bowl, whisk together fish sauce, tamarind paste, sugar, lime juice, and chili powder. Set aside.

In the same skillet, add another tablespoon of oil. Crack the eggs into the pan and scramble until fully cooked.

Add the soaked noodles, cooked chicken, and sauce to the skillet. Stir-fry everything together for about 3-5 minutes until everything is well mixed and heated through.

Stir in bean sprouts and green onions, and cook for an additional 2 minutes.
