Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and salt. Mix well until all crumbs are moistened. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, and then mix in the vanilla extract and sour cream until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Combine and bake
Pour the cream cheese mixture over the cooled crust in the springform pan. Tap the pan on the counter to release any air bubbles. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool and serve
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight. When ready to serve, remove the sides of the springform pan and slice the cheesecake.
