Prepare the Ice Cream
Scoop the ice cream into small balls (about 1.5 inches in diameter) and place them on a baking sheet lined with parchment paper. Freeze for at least 1 hour, or until solid.

Cook the Mochi Dough
Microwave the mixture on high for 1 minute, then stir well. Microwave for another minute, stir again, and then microwave for a final minute. The dough should be thick and slightly translucent.

Dust the Surface
Dust a clean surface with cornstarch to prevent sticking. Transfer the mochi dough onto the dusted surface.

Shape the Mochi
Using a rolling pin, roll out the mochi dough to about 1/4 inch thickness. Use a round cutter to cut out circles of dough.

Wrap the Ice Cream
Take a mochi circle, place a frozen ice cream ball in the center, and carefully fold the edges over the ice cream to seal it. Pinch the edges together to ensure it's well sealed.

Freeze Again
Place the wrapped mochi ice cream back on the parchment-lined baking sheet and freeze for at least 2 hours to firm up before serving.
