Cook the Chicken
Heat oil in a frying pan over medium heat. Season chicken breasts with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from heat and let rest before slicing.

Prepare the Vegetables
Julienne the carrot, cucumber, and red bell pepper. Chop the green onions.

Make the Peanut Dressing
In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and water until smooth.

Assemble the Salad
In a large bowl, combine arugula, julienned vegetables, and sliced chicken. Drizzle with peanut dressing and toss gently to coat. Top with peanuts.
