Prepare the Steaks
Take the filet mignon steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with a paper towel.

Season the Steaks
Generously season both sides of the steaks with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Steaks
Add the steaks to the hot skillet and sear for about 4-5 minutes on each side for medium rare, or longer depending on your preferred doneness.

Add Butter and Aromatics
During the last 2 minutes of cooking, add the butter, garlic cloves, and rosemary to the pan. Spoon the melted butter over the steaks as they finish cooking.

Rest the Steaks
Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.

Serve
Slice and serve the filet mignon with the pan juices drizzled on top.
