Prepare the Brine

In a large bowl, combine brown sugar, apple cider vinegar, ketchup, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well until the sugar is dissolved.

Brine the Turkey Wings

Submerge the turkey wings in the brine mixture. Cover and refrigerate for at least 4 hours, preferably overnight.

Smoke the Turkey Wings

Preheat your smoker to 225°F (107°C). Remove the turkey wings from the brine and pat them dry with paper towels. Place the wings in the smoker and smoke for about 2.5 to 3 hours, or until they reach an internal temperature of 165°F (74°C).

Prepare the BBQ Sauce

While the wings are smoking, prepare the BBQ sauce by combining any leftover brine with additional ketchup and brown sugar in a saucepan. Simmer on low heat for 15-20 minutes until thickened.

Glaze the Wings

During the last 30 minutes of smoking, brush the BBQ sauce over the turkey wings to glaze them.

Garnish and Serve

Once smoked, remove the wings from the smoker and let them rest for 10 minutes. Garnish with chopped chives before serving.
