Preparing Pork Rillette

    Cook the Pork

    In a large pot, combine the pork shoulder, shallots, thyme, garlic, salt, and pepper. Add enough water to cover the pork. Bring to a simmer over medium heat, then reduce to low and cover. Cook for about 3 hours until the pork is tender.

    Shred the Pork

    Remove the pork from the pot and let it cool slightly. Shred the meat using two forks and set aside.

    Make the Rillette

    In a bowl, mix the shredded pork with duck fat (or butter) and cognac. Adjust seasoning with salt and pepper as needed. Transfer to a serving dish and refrigerate for at least 2 hours to firm up.

    Plate the Ingredients

    On a large serving board or platter, arrange the pork rillette, Jamón Serrano, whole grain mustard, house pickles, and crostini.
