In a separate pan, cook the fennel sausage over medium heat until browned and cooked through, breaking it up with a spoon.

In a small pan, toast the pepitas over medium heat until they are golden and aromatic, about 3-5 minutes.

On a serving plate, spread a layer of squash puree. Top with seared Brussels sprouts, crumbled fennel sausage, shaved Manchego cheese, pickled red onion, and toasted pepitas. Finish with a sprinkle of lemon zest.
