    Trim the ends of the Brussels sprouts and slice them in half. Toss in olive oil, salt, and black pepper.

    Heat a large pan over medium-high heat. Add the Brussels sprouts cut-side down and sear for about 4-5 minutes until golden brown. Flip and cook for an additional 4-5 minutes until tender.

    Cook the Fennel Sausage

    In a separate pan, cook the fennel sausage over medium heat until browned and cooked through, breaking it up with a spoon.

    Prepare the Pepitas

    In a small pan, toast the pepitas over medium heat until they are golden and aromatic, about 3-5 minutes.

    Assemble the Dish

    On a serving plate, spread a layer of squash puree. Top with seared Brussels sprouts, crumbled fennel sausage, shaved Manchego cheese, pickled red onion, and toasted pepitas. Finish with a sprinkle of lemon zest.
