    Prepare the Caramel

    In a saucepan over medium heat, combine sugar and water. Stir until sugar dissolves, then stop stirring and allow to cook until it turns a golden brown color. Quickly pour the caramel into a round flan mold, tilting to coat the bottom evenly.

    Make the Flan Mixture

    In a large mixing bowl, combine pumpkin puree, sweetened condensed milk, evaporated milk, eggs, vanilla extract, and ground cinnamon. Whisk together until smooth and well combined.

    Combine and Bake

    Pour the pumpkin mixture over the caramel in the flan mold. Place the mold in a larger baking dish filled with water (water bath) and bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until the flan is set.

    Cool and Serve

    Allow the flan to cool completely at room temperature, then refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a serving plate. Top with cinnamon whipped cream.
