    Prepare the Fries

    Wash and peel the russet potatoes, then cut them into matchstick shapes. Rinse the fries in cold water to remove excess starch and pat them dry with a towel.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt.

    Make the Gravy

    In a skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet. Add sliced onion to the skillet and caramelize until golden brown, about 10 minutes. Stir in flour and cook for 1 minute, then gradually add broth while stirring. Bring to a simmer and cook until thickened, about 3-5 minutes. Season with salt and black pepper.

    Assemble the Poutine

    On a serving plate, place a generous portion of fries, top with crispy bacon, pour the gravy over the fries, and finish with cheddar cheese curds and chopped fresh herbs.
