Prepare the Filling

In a large bowl, combine the sliced apples with sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss well to coat the apples evenly. Let the mixture sit for about 15 minutes to allow the flavors to meld.

Preheat the Oven

Preheat your oven to 425°F (220°C).

Assemble the Pie

Roll out one pie crust and fit it into a 9-inch pie dish. Fill the crust with the apple mixture, and dot the top with cold, diced butter. Place the second pie crust on top, crimping the edges to seal. Cut a few slits in the top crust to allow steam to escape.

Bake the Pie

Bake the pie in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are tender and the crust is golden brown.

Cool and Serve

Remove the pie from the oven and let it cool for at least 30 minutes. Serve warm with scoops of vanilla ice cream on top or on the side.
