Preparing the Dough

    Activate the Yeast

    In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tsp) over the water and let it sit for about 5-10 minutes until frothy.

    Mix the Dry Ingredients

    In a large mixing bowl, whisk together all-purpose flour (3 cups) and salt (1 tsp). If using, you can also add garlic powder (1 tsp) at this stage.

    Combine Wet and Dry Ingredients

    Make a well in the center of the dry ingredients and add the activated yeast mixture and olive oil (2 tbs). Mix until a dough starts to form.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let the Dough Rise

    Place the kneaded dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Shaping and Baking Pita

    Preheat the Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat.

    Divide the Dough

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball.

    Roll Out the Dough

    On a lightly floured surface, roll each ball into a circle about 1/4 inch thick.

    Add Optional Toppings

    If desired, sprinkle sesame seeds (2 tbs) on top of the rolled dough and gently press them into the surface.

    Bake the Pitas

    Carefully place the rolled-out dough on the preheated baking stone or baking sheet. Bake for about 5-7 minutes until they puff up and are slightly golden.

    Remove the baked pita from the oven and let them cool on a wire rack. Serve warm or at room temperature.
