Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Vegetables
Peel and cube the butternut squash and sweet potato into 1-inch pieces. Slice the zucchini into rounds. If using fresh pearl onions, blanch them in boiling water for 2 minutes and then peel.

Mix the Vegetables
In a large bowl, combine the butternut squash, zucchini, pearl onions, sweet potato, and corn kernels.

Spread on Baking Sheet
Spread the seasoned vegetables in a single layer on a large baking sheet lined with parchment paper.

Roast in the Oven
Roast in the preheated oven for about 25-30 minutes or until the vegetables are tender and lightly browned, stirring halfway through to ensure even cooking.

Once roasted, remove the vegetables from the oven and let them cool slightly before serving. Enjoy warm as a side dish or over a bed of greens.
