Method
Preparation of Quinoa

Rinse the Quinoa
Place the quinoa in a fine mesh strainer and rinse under cold water to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for about 15 minutes, or until the quinoa is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Fluff the Quinoa
After resting, fluff the quinoa with a fork and set aside to cool.

Combine Ingredients
In a large mixing bowl, combine the cooked quinoa, chickpeas, diced cucumber, crumbled feta cheese, and halved olives.

Dress the Bowl
In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and dried oregano. Pour the dressing over the quinoa mixture.

Toss the Bowl
Gently toss all ingredients together until well combined and coated with the dressing.

Spoon the Mediterranean bowl into serving dishes and enjoy immediately.
